Claypot Bean Curd with Mushrooms Recipe

Claypot Bean Curd with Mushrooms Recipe

Ingredients :

    • Prawns (shrimps) 90 g, small, shelled and deveined
    • Salt 1/4 tsp
    • Sugar 1/4 tsp
    • Ground white pepper 1/4 tsp
    • Cooking oil 1/2 Tbsp
    • Chinese rice wine 1 Tbsp
    • Fresh Shiitake mushrooms 3, rinsed and sliced
    • Silken soft bean curd (taufu) 300 g, cut into small cubes
    • Potato fl our 11/2 Tbsp, mixed with 3 Tbsp water
    • Egg whites 2, lightly beaten with 1 Tbsp water
    • Shallot oil 1/2 Tbsp
    • Black vinegar a dash
    • Spring onion (scallion) 1/2, chopped

Stock

    • Fresh chicken stock 625 ml
    • Salt 1 tsp
    • Light soy sauce 1 dsp
    • Ground white pepper 1/tsp

Method :

    1. Season prawns with salt, sugar and pepper.
    2. Combine stock ingredients in a bowl.
    3. Heat oil in a medium-sized claypot and add wine and stock. Bring to the boil and stir in mushrooms, prawns and bean curd cubes.
    4. Allow sauce to come to the boil again, then thicken with potato fl our mixture.
    5. Gradually stir in beaten egg white and water mixture, then shallot oil.
    6. Serve with a dash of black vinegar and garnish with chopped spring onion.
