Pandan Chicken Recipe

Ingredients :

    • Boneless chicken – 500 g, cut into 6 x 2.5-cm pieces
    • Shallots – 4, peeled
    • Young ginger – 2-cm knob, peeled
    • Garlic – 2 cloves, peeled
    • Lemon grass (serai) – 1 stalk
    • Light soy sauce – 3 tsp
    • Fish sauce – 1 tsp
    • Worcestershire sauce – 3 tsp
    • Salt – 1/2 tsp
    • Ground white pepper – 1/2 tsp
    • Chilli powder – 2 tsp
    • Coconut cream – 125 ml, from 1/2 grated coconut and suffi cient water
    • Screwpine (pandan) leaves – 6, cleaned
    • Bamboo cocktail sticks – 6
    • Cooking oil for deep-frying

Method :

    1. Rinse chicken pieces and dry well with paper towel.
    2. Blend (process) shallots, ginger, garlic and lemon grass together and mix with sauces, salt, pepper, chilli powder and coconut cream.
    3. Add chicken and mix well. Leave to marinate for at least 4 hours.
    4. Wrap each piece of chicken with a screwpine leaf and secure with a cocktail stick.
    5. Heat oil in a wok and deep-fry for 6–8 minutes or until chicken is cooked through.
    6. Drain and serve hot, allowing guests to unwrap the chicken on their own.

Preparation time : 30 minutes
Cooking time : 10 minutes
