Peanut Cookies (Fah Sang Peang) Recipe

Peanut Cookies (Fah Sang Peang) Recipe

Ingredients :

    • Roasted peanuts (groundnut) – 350 g
    • Castor (superfi ne) sugar – 270 g
    • Vanilla essence (extract) – 1 tsp
    • Plain (all-purpose) fl our – 350 g, sifted
    • Peanut (groundnut) oil – 250 ml
    • Glacé cherries cut into – 0.25-cm pieces, for decoration
    • Egg Glaze
    • Egg yolks – 2, lightly beaten
    • Milk – 2 tsp

Method :

    1. Blend (process) peanuts in an electric blender until fi ne and crumbly.
    2. In a large mixing bowl, combine ground peanuts, sugar, vanilla essence and fl our. Make a well in the centre and pour in peanut oil. Mix well with a wooden spoon.
    3. Lightly run through the mixture with fi ngers to bind it into a crumbly dough.
    4. Make egg glaze by combining egg yolks with milk.
    5. Shape dough into balls about the size of a cherry. Make a shallow dent in each ball with the pointed end of a chopstick. Press a piece of glacé cherry into each dent and brush cookies well with egg glaze.
    6. Bake in a preheated oven at 175°C for 20–25 minutes or until golden brown. Remove cookies gently to avoid breaking them. Cool completely before serving or storing in an airtight jar.
