Sago Pudding Recipe

Sago Pudding Recipe

Ingredients :

    • Pearl sago – 240 g
    • Egg white – 1
    • Salt – a pinch
    • Palm sugar (gula Melaka) syrup – 1 recipe
    • Coconut milk – 800 ml from 11/2 grated coconuts and suffi cient water, mixed with a pinch of salt

Method :

    1. Wash sago and drain. Put in a saucepan of boiling water, stir well and cook for about 10 minutes until sago becomes transparent. Pour into a large sieve and put under running water. Stir to get rid of excess starch. Stand sieve over a bowl to allow water to drain off completely.
    2. Whisk egg white and salt until stiff and fold into sago. Spoon mixture into small jelly moulds and chill in the refrigerator while preparing palm syrup and coconut milk.
    3. Remove chilled sago from refrigerator and pop out of moulds. Place on individual serving dishes and top sago pudding with coconut milk and palm syrup to taste.
