Bean Sprouts with Salted Fish Recipe

Bean Sprouts with Salted Fish Recipe

Ingredients :

    • Cooking oil – 100 ml
    • Salted fi sh (threadfin) – 45 g, preferably washed and fi nely sliced
    • Garlic – 3 cloves, peeled and minced
    • Light soy sauce – 1/2 Tbsp
    • Sesame oil – 1/2 Tbsp
    • Bean sprouts – 300 g, washed and drained
    • Red chilli – 1, seeded and cut into strips
    • Spring onion (scallion) – 1, split and cut into 5-cm lengths
    • Coriander (cilantro) leaves – 1 sprig

Method :

    1. Heat half the oil in a wok until hot. Put in salted fi sh and fry over low heat until crisp and light golden brown. Drain and leave aside. Discard oil.
    2. Heat remaining oil in the same wok and lightly brown garlic. Remove and place on a serving dish. Mix with light soy sauce and sesame oil.
    3. Bring half a saucepan of water to a rapid boil. Put in bean sprouts and scald for a few seconds.
    4. Drain well and place in dish of prepared sauce. Mix to combine ingredients, then sprinkle with fried salted fi sh. Garnish with red chilli, spring onion and coriander. Serve hot.
