Cencaluk Chicken Recipe

Cencaluk Chicken Recipe

Ingredients :

    • Chicken thighs – 250 g, de-boned and cut into strips
    • Sugar – 1 tsp
    • Salted baby prawns (shrimps) (cencaluk) – 2 Tbsp
    • Cooking oil – 2 Tbsp
    • Lemon grass (serai) – 2 stems, crushed
    • Onions – 2, peeled and cut into wedges
    • Garlic – 2 cloves, peeled and minced
    • Water – 125 ml
    • Dark soy sauce – 1 tsp
    • Red chillies – 2, sliced
    • Green chillies – 2, sliced

Method :

    1. Marinate chicken with sugar and salted prawns for 15 minutes.
    2. Heat oil in a wok and fry crushed lemon grass, onions and garlic until fragrant.
    3. Put in chicken and stir-fry for another 2 minutes.
    4. Add water, dark soy sauce and chillies. Stir-fry until chicken is cooked and sauce is thickened. Serve hot.

Preparation time : 15 minutes
Cooking time : 30 minutes
