Chicken and Bean Curd in Hoisin Sauce Recipe

Chicken and Bean Curd in Hoisin Sauce Recipe

Ingredients :

    • Chicken thigh – 1, skinned and cut into 2-cm pieces
    • Salt – 1/tsp
    • Ground white pepper – 1/tsp
    • Dried Chinese mushrooms – 4, soaked to soften and halved
    • Sugar – 1/4 tsp
    • Cooking oil – 2 Tbsp
    • Garlic – 3 cloves, peeled and minced
    • Ginger – 4 thick slices, peeled
    • Firm bean curd (tau korn) – 3 pieces, diced into 1.5-cm cubes
    • Green capsicum (bell pepper) – 1, small, diced
    • Red chilli – 1, seeded and diced
    • Cornfl our (cornstarch) – 1 tsp, mixed with 1 Tbsp water

Sauce

    • Fresh chicken stock – 125 ml
    • Hoisin sauce – 1 Tbsp
    • Oyster sauce – 1 Tbsp
    • Salt – 1/tsp
    • Sugar – 1/2tsp

Method :

    1. Season chicken with hlaf the salt and pepper. Set aside.
    2. Season mushrooms with remaining salt and pepper and sugar. Set aside.
    3. Heat oil in a wok and lightly brown garlic and ginger. Add chicken and cook for 1 minute. Add mushrooms and stir-fry until fragrant. Add bean curd and toss gently.
    4. Add capsicum and chilli and mix well. Combine sauce ingredients and add to wok. Bring to the boil and thicken with cornfl our mixture. Serve hot.

Cooking time : 15 minutes
