Chinese Ladle Cake Recipe

Ingredients :

    • Prawns (shrimps) – 16, medium-sized, washed
    • Self-raising fl our – 180 g
    • Rice fl our – 60 g
    • Plain (all-purpose) fl our – 60 g
    • Salt – 11/4 tsp
    • Ground white pepper – 1/2 tsp
    • Water – 310 ml
    • Spring onion (scallion) – 1, chopped
    • Green chillies – 3, fi nely sliced
    • Onion – 1, peeled and fi nely sliced
    • Cooking oil for deep-frying

Method :

    1. Leave prawns with shell intact or shell, but leave heads and tails intact. Trim eye section using a pair of scissors.
    2. Sift fl ours into a mixing bowl then add salt and pepper and mix into a soft batter with water. Stir in spring onion, green chillies and onion.
    3. Heat oil for deep-frying. Heat a ladle in hot oil for 1 minute. Remove hot ladle and pour in 11/2 Tbsp batter mixture to fi ll ladle. Place a prawn in the centre and press down lightly.
    4. Deep-fry until cake turns light golden. Loosen cake from ladle with a small knife. Let it cook further for a minute or two until cake turns golden brown. Continue until batter is used up.
    5. Drain on absorbent paper. Serve with chilli sauce.
