Five Spice Beijing Spareribs Recipe

Ingredients :

    • 500 g (1 lb) pork spareribs
    • 4 tablespoons soy sauce
    • 2 tablespoons sugar
    • Oil, for deep-frying
    • 2 spring onions, chopped
    • 2 slices ginger, minced
    • 1 teaspoon rice wine
    • 1/2 teaspoon fennel seeds
    • 1 teaspoon brown sugar
    • 5 teaspoons rice vinegar
    • 1 teaspoon salt, or to taste

Method :

    1. Wash the spareribs and chopped into 3-cm (11/4-in) long pieces. Soak in cold water to cover for 5 minutes. Remove, drain and marinate in 2 tablespoons soy sauce for 15 minutes. Drain, dry well and rub with the sugar. Set aside.
    2. Heat the oil in a wok over high heat. Add the spareribs and deep-fry until golden brown. Remove with a slotted spoon and set aside. Pour out the oil, leaving only enough oil to cover the bottom of the wok.
    3. Reheat the wok and add the spring onions and ginger. Return the spareribs to the wok. Stir in the rice wine, fennel seeds, brown sugar, vinegar, salt and the remaining soy sauce. Stir-fry for about 1 minute. Reduce the heat to low and simmer until the sauce thickens and the meat falls from the bones. Remove and serve hot.
