Fried Sar Ho Fun with Cockles Recipe

Fried Sar Ho Fun with Cockles Recipe

Ingredients :

    • Cockles – 300 g
    • Prawns (shrimps) – 150 g, shelled and cleaned
    • Salt – 1/2 tsp
    • Ground white pepper – 1/4 tsp
    • Cooking oil – 60 ml
    • Garlic – 3 cloves, peeled
    • Fresh fl at rice noodles – 600 g
    • Bean sprouts – 150 g, tailed
    • Dark soy sauce – 1 Tbsp
    • Light soy sauce – 2 Tbsp
    • Eggs – 2, lightly beaten
    • Water – 60 ml
    • Ground white pepper a dash

Method :

    1. Pour boiling water over cockles and drain immediately. Remove fl esh from shells. Season prawns with salt and pepper and set aside.
    2. Heat three quarters of the oil in a wok until smoking hot. Put in garlic and prawns and stir-fry quickly over high heat. Place noodles in and stir-fry for 1–2 minutes before adding bean sprouts. Stir to mix and add combined dark and light soy sauce. Stir-fry for 1 minute.
    3. Push noodles to one side of wok and add remaining oil. Pour in eggs, leave for 30 seconds to set then stir-fry together with noodles and bean sprouts.
    4. Sprinkle water over noodles while stirring. Lastly, add cockles and toss for 30 seconds. Remove from heat and serve hot, sprinkled with a dash of pepper.

Preparation time : 20 minutes
Cooking time : 7 minutes
