Pressed Bean Curd, Dried Radish and Peanuts (Chao Lup Lup) Recipe

Ingredients :

    • Cooking oil – 1 Tbsp
    • Onion – 1, medium, peeled, halved and sliced
    • Garlic – 2 cloves, peeled and minced
    • Dried salted radish (choy poh) – 75 g, soaked for 10 minutes and chopped
    • Long beans – 100 g, cut into 1-cm lengths
    • Carrot – 75 g, peeled, diced and parboiled
    • Five spice-fl avoured compressed bean curd (ng heong taufu) – 100 g, diced
    • Fresh chicken stock – 2 Tbsp
    • Light soy sauce – 2 tsp
    • Sugar – 1 tsp
    • Ground white pepper – 1/4 tsp
    • Red chilli – 1, seeded and cut into 1-cm pieces
    • Peanuts (groundnuts) – 60 g, roasted
    • Sesame seeds – 1/2 Tbsp, roasted

Method :

    1. Heat oil in a wok and lightly brown onion and garlic. Add dried salted radish and stir-fry for 1 minute. Add long beans and continue to cook for 3 minutes. Add carrot and compressed bean curd.
    2. Stir in chicken stock, soy sauce, sugar, pepper and red chilli. Mix well and cook until mixture is almost dry.
    3. Add peanuts and sesame seeds and toss well. Dish out and serve hot with rice.
