Roasted Duck with Plum Sauce (Pee Par Hup) Recipe

Roasted Duck with Plum Sauce (Pee Par Hup) Recipe

Ingredients :

    • Roasted duck – 1
    • Cooking oil for deep-frying
    • Sesame seeds – 1 Tbsp, roasted
    • Coriander (cilantro) leaves – 1 sprig, chopped
    • Tomatoes – 2, sliced

Sauce

    • Tomato sauce 3 Tbsp
    • Chilli sauce 1 Tbsp
    • Plum sauce 1 Tbsp
    • Sugar 21/2 dsp
    • Salt 1/2 tsp
    • Sesame oil 2 tsp
    • A1 steak sauce 3 dsp
    • Worcestershire sauce 11/2 dsp
    • Hot water 75 ml
    • Cornfl our (cornstarch) 1 tsp

Method :

    1. Put roasted duck in a steamer over rapidly boiling water and steam for 1 hour. If preferred, duck can be steamed the night before.
    2. Make a cut lengthwise down breast of duck with a sharp cleaver but do not cut through.
    3. Heat oil for deep-frying in a wok until hot. Fry duck, turning over occasionally, for 15–20 minutes until skin is crisp and golden brown.
    4. Cut duck into serving-sized pieces and arrange neatly on a dish.
    5. Drain oil from wok, leaving a little to cook sauce. Heat oil and add combined sauce ingredients. Stir until sauce is thick. Spoon over duck and sprinkle with roasted sesame seeds. Serve hot, garnished with coriander leaves and tomatoes.
