Egg and Sardine Hors D’oeuvre Recipe

A delicious and very simple hors d’oeuvre, these stuffed eggs may be served with brown bread and butter.

Ingredients :

  • Hard-boiled eggs 6, shelled
  • Canned sardines 170 g (51/2 oz), drained
  • Mayonnaise 4 Tbsp
  • Lemon juice 1 Tbsp
  • Chopped fresh parsley 1 Tbsp
  • Salt 1/2 tsp
  • Ground white pepper 1/4 tsp

Method :

  1. Halve eggs lengthwise, then cut a thin slice off the bottom of each half so it has a fl at surface to sit on and will not wobble.
  2. Remove yolks and press them through a strainer into a small bowl.
  3. Mash sardines into egg yolks. Add mayonnaise, lemon juice, parsley, salt and pepper. Mix well.
  4. Spoon mixture into prepared whites and serve chilled.

Note : For a variation to this recipe, use cooked and chopped chicken meat instead of sardines, and omit the lemon juice.
