Eggs Stuff Ed with Ham and Herbs Recipe

Eggs Stuff Ed with Ham and Herbs Recipe

Hard-boiled eggs stuffed with a delicious ham and egg mixture and then fried.

Ingredients :

  • Hard-boiled eggs 4, shelled
  • Ham 55 g (2 oz), finely chopped
  • Butter 115 g (4 oz)
  • Chopped fresh chives 1 Tbsp
  • Dried thyme 1 tsp
  • Worcestershire sauce 1 tsp
  • Eggs 2
  • Salt 1/2 tsp
  • Ground black pepper 1/4 tsp
  • Dried white breadcrumbs 4 Tbsp

Method :

  1. Cut eggs in half lengthwise. Remove yolks and place in a mixing bowl. Set whites aside.
  2. Add ham, half the butter, chives, thyme, Worcestershire sauce, 1 egg, salt and pepper to egg yolks. With a wooden spoon, cream mixture thoroughly until smooth.
  3. Spoon mixture into egg white halves. Sandwich halves together to form a whole egg. The halves should not fit
    tightly together.
  4. In a small bowl, lightly beat remaining raw egg with a fork. Roll stuff ed eggs in beaten egg, then roll in breadcrumbs.
  5. In a pan, melt remaining butter over moderate heat. Place stuff ed, coated eggs in pan and fry for 5 minutes or until eggs are golden brown all over.
  6. With a slotted spoon, carefully transfer stuff ed eggs from pan to a warmed serving dish. Serve immediately.
