Brown Rice Flour Cakes (Kutsinta) Recipe

Brown Rice Flour Cakes (Kutsinta) Recipe

Ingredients :

    • 2 cups (250 g) rice flour
    • 11/2 cups (300 g) brown sugar
    • 3 cups (750 ml) water
    • 1 teaspoon lye water (potassium carbonate solution)
    • Freshly grated coconut, dry-fried in a skillet over low heat until golden brown, or Latik, to garnish

Method :

    1. Mix the rice flour, sugar, water and lye water in a bowl. Spoon the mixture into small muffin pans until about halfway full.
    2. Steam in a large, covered pan for 30 minutes or until a toothpick inserted into the rice cakes comes out clean. Add more water to the pan if needed until the rice cakes are firm and fully cooked.
    3. Remove the rice cakes from the molds by running a sharp knife around the edges of the molds. Garnish with crispy roasted coconut and serve hot or at room temperature.
