Chicken Soup with Green Papaya and Ginger Recipe (Tinolang Manok)

Chicken Soup with Green Papaya and Ginger Recipe (Tinolang Manok)

This soothing and delicious chicken and ginger soup was popularized in the novel Noli Me Tangere by Jose P Rizal, the Philippines’ founding father and national hero.

Ingredients :

    • 2 tablespoons oil
    • 5 cloves garlic, minced
    • 1 small onion, diced
    • 1 in (21/2 cm) ginger, bruised
    • 1 chicken (2 lbs/1 kg), cut into serving pieces
    • 2 teaspoons fish sauce (patis) or 1 teaspoon salt
    • Freshly ground black pepper, to taste
    • 5 cups (11/4 liters) water
    • 8 oz (250 g) unripe papaya, chayote or zucchini, peeled and cubed
    • 2 cups (about 100 g) fresh spinach leaves, watercress or chili leaves, washed and trimmed

Method :

    1. Heat the oil in a pot and stir-fry the garlic until golden brown. Add the onion and ginger, and stir-fry until the onion is translucent.
    2. Add the chicken pieces and stir-fry over medium heat until partially cooked, about 3 minutes. Then season with the fish sauce and pepper. Add the water and simmer, covered, over medium heat until the chicken is tender, about 30 minutes.
    3. Add the papaya, chayote or zucchini and cook until tender, about 10 minutes. Turn off the heat and add the spinach or watercress. Mix well until the vegetables are wilted. Serve immediately with rice.
