Halo Halo Supreme (Exotic Fruit Mix) Recipe

Known as the “Queen of Desserts” this is the Philippine’s most beloved treat. Similar to Malaysian Ice Kacang, it features exotic fruits and sweets that Filipinos enjoy. This indulgent recipe from Gene Gonzalez at Cafe Ysabel in Manila calls for everything all at once, but you can easily substitute or reduce the number of ingredients to simplify the preparation.

Ingredients :
Topping :

    • 1/2 cup (125 ml) pandanus syrup (see note) or maple syrup
    • 11/2 cups (375 ml) evaporated milk or fresh cream
    • 4 tablespoons Crème Caramel
    • 4 tablespoons pinipig or rice crispies
    • 4 scoops French vanilla ice cream

Base :

    • 4 teaspoons sweet red adzuki beans (see note)
    • 4 teaspoons sweet yellow mung beans (see note)
    • 4 tablespoons banana or boiled plantain, mashed
    • 4 tablespoons boiled and mashed purple yam (ube)
    • 4 tablespoons coconut sport (macapuno)
    • 4 tablespoons coconut gelatin (nata de coco)
    • 4 tablespoons palm nuts (kaong)
    • 4 tablespoons sweet creamed corn
    • Shaved ice

Method :

    1. Fill the bottom halves of four serving bowls with the Base ingredients. Cover with shaved ice to reach the top of the bowls.
    2. Drizzle the pandanus syrup or maple syrup and milk or cream over each bowl. Top with a tablespoon each of the Crème Caramel and pinipig, and a scoop of the ice cream. Serve immediately.

Note : To make pandanus syrup, blend 4 pandanus leaves in a food processor with 1/4 cup (60 ml) water, then add 3 tablespoons sugar and heat in a saucepan until it thickens. Strain to remove the bits of pandanus leaves. Pandanus extract is available in bottles in Filipino shops and you can make pandanus syrup by combining 1/4 teaspoon pandanus extract with 1/2 cup (125 ml) sugar syrup. Sweet adzuki beans and mung beans are available in cans. Purple yams and plantains should be rinsed and boiled whole for 20 minutes, then peeled and mashed. Add a bit of sugar if desired. Coconut sport, coconut gelatin and palm nuts are available in bottles.
