Rice Patties with Sweet Grated Coconut (Palitao) Recipe

Rice Patties with Sweet Grated Coconut (Palitao) Recipe

Ingredients :

    • 2 cups (250 g) glutinous rice flour
    • 1 cup (250 ml) water
    • 3 cups (450 g) freshly grated coconut mixed with 2 cups (400 g) sugar
    • Toasted sesame seeds, to garnish (optional)

Method :

    1. In a mixing bowl, knead the rice flour and water to make a smooth dough that holds together and separates cleanly from the pan. With floured hands, pinch off about 11/2 tablespoons of the dough and shape into a small patty, about 2 in (5 cm) in diameter and about 1/2 in (1 cm) thick. Set aside on a dry plate. Repeat with the rest of the dough to make about 30 patties in all.
    2. Place the sweetened coconut into a bowl. Drop the patties into a saucepan of boiling water. When they float to the top, scoop them out with a slotted spoon, drain and place into the bowl with the coconut. Garnish with sesame seeds, if using, and serve hot or at room temperature.
