Stir-fried Mung Beans (Guinisang Monggo) Recipe

Stir-fried Mung Beans (Guinisang Monggo) Recipe

Ingredients :

    • 1 cup (200 g) dried green mung beans
    • 4 cups (1 liter) water
    • 1 teaspoon salt
    • 2 tablespoons oil
    • 8 oz (250 g) pork meat, diced
    • 6 cloves garlic, minced
    • 1 large onion, finely diced
    • 2 plum tomatoes, diced
    • 3 cups (750 ml) Chicken Stock (page 28) or 11/2 teaspoons chicken stock granules mixed with 3 cups (750 ml) hot water
    • 1 tablespoon fermented baby shrimp (bagoong alamang)
    • 1 cup (50 g) bitter melon leaves or 11/2 cups (21/2 oz/ 75 g) spinach, washed and trimmed
    • 1/2 teaspoon freshly ground black pepper

Method :

    1. Place the mung beans, water and salt in a large saucepan and bring to a boil for 30 minutes or until the beans are tender. Drain the beans and set aside.
    2. In another large saucepan, heat the oil and brown the pork. Drain and set the pork aside.
    3. In the same saucepan, stir-fry the garlic until golden brown, then stir-fry the onion until translucent. Add the tomatoes and cook until they soften. Add the mung beans, stock and fermented shrimp, mix well and bring to a boil.
    4. Reduce the heat and add the bitter melon leaves or spinach, and cook until just tender, about 3 minutes. Add the cooked pork, season with the pepper and stir to mix well. Serve hot.
