Banana Fritters (Pisang Goreng) Recipe

One of the most beloved foods in Indonesia, Banana Fritters are both a dessert and a snack for locals. This simple comfort food is so popular that it’s sold everywhere in Indonesia, from five-star hotels to street stalls on dirt roads. If you ever have the chance to visit Indonesia and partake in the mad traffic on your way to some lovely destination, you can be sure that a young, hard-working child will run up to your car window attempting to sell you a couple of banana fritters. Through countless attempts, I’ve perfected this recipe that is one of the most popular with my own family and friends. It has a lightly crisp exterior and is soft and sweet on the inside.

Ingredients :

    • Oil for deep-frying
    • 6 large ripe bananas, peeled
    • 11/2 cups (175 g) self-rising flour
    • 2 large eggs
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking powder
    • 1/2 cup (125 ml) coconut milk
    • 1/2 cup (125 ml) club soda
    • Sweetened condensed milk for drizzling (optional)

Method :

    1. Heat the oil in a large wok or fryer over medium high until the oil reaches 375°F (190°C). Alternatively, if you don’t have a cooking thermometer, you can stick a chopstick in the oil and if bubbles appear then the oil is hot enough.
    2. Cut the peeled bananas in half. Using the palm of your hand, gently press down on each of the banana halves to slightly flatten it. Set the bananas aside.
    3. Mix together the flour, eggs, salt, baking powder, coconut milk, and club soda in a large mixing bowl until a smooth consistency is achieved.
    4. Coat the bananas thoroughly in the batter and gently slip them one at a time into the hot oil. Fry a few bananas at a time and don’t overcrowd them or they will stick together. Once a banana has turned golden brown on one side (after about 1 minute or so) gently flip it over and cook for about another minute until the other side is golden. Drain on paper towels and serve warm as is or drizzled with condensed milk.
