Buginese Chicken Stew Recipe – Resep Ayam Masak Bugis

A Buginese favorite from Southern Sulawesi, this dish is prepared by simmering a whole chicken in seasoned stock and coconut milk. 

Ingredients :

  • 1 fresh chicken (about 2 lbs/1 kg)
  • 4 cups (1 liter) chicken stock or 2 teaspoons chicken stock granules dissolved in 4 cups (1 liter) warm water
  • 2 cloves garlic, peeled and sliced
  • 12 shallots, peeled and sliced
  • 1 tablespoon dried shrimp paste (trasi), dry-roasted (page 23)
  • 2 tablespoons tamarind juice (page 26)
  • 1 teaspoon ground white pepper
  • 2 salam leaves
  • 1 cinnamon stick
  • 4 cloves
  • 1/4 teaspoon freshly grated nutmeg or ground nutmeg
  • 1 teaspoon salt
  • 1 teaspoon shaved palm sugar or dark brown sugar
  • 1 tablespoon white vinegar
  • 1 cup (250 ml) thick coconut milk
  • Crispy Fried Shallots, to garnish (optional)

Method :

  1. Prepare the Crispy Fried Shallots (if using).
  2. Clean and cut the chicken into serving pieces.
  3. Bring the chicken stock to a boil over medium heat in a pot. Add all the ingredients, except the chicken and coconut milk, return to a boil and simmer uncovered for 3 to 5 minutes. Add the chicken and coconut milk and bring to a boil again, then simmer uncovered, turning the chicken from time to time until tender and cooked, about 20 minutes.
  4. Remove the chicken from the pot and place in a deep platter. Continue to simmer the sauce for 5 to 10 more minutes, until it reduces to half.
  5. Pour the sauce over the chicken, garnish with Crispy Fried Shallots and serve with fragrant steamed rice.

Note : For a complete one-pot meal, you can add vegetables like green beans, baby corn, celery, mushrooms, carrots, potatoes, tomatoes and spring onions to the sauce (in Step 4) and simmer until the sauce is thickened.
