Green Mango Sambal Recipe

Green Mango Sambal Recipe

Ingredients :

  • 1 unripe mango (about 8 oz/ 250 g), peeled and pitted, flesh finely diced
  • 1 teaspoon salt
  • 1 red finger-length chili, deseeded
  • 5 shallots, peeled
  • 1/2teaspoon dried shrimp paste (trasi), dry-roasted
  • 1 sprig Asian basil, minced
  • 2 tablespoons oil

Method :

  1. Sprinkle the mango with the salt, mix well and set aside for 10 to 15 minutes in a colander to drain. Place the mango in a dry cloth and squeeze out as much liquid as you can.
  2. Grind the chili, shallots and dried shrimp paste to a smooth paste in a mortar or blender, adding a little oil to keep the mixture turning. Add the basil and oil to the ground mixture and mix well, then add this mixture to the mango and toss lightly. Serve immediately.

Makes 11/2 cups
