Iced Sweet Green Beans (Es Kacang Hijau) Recipe

Indonesia’s tropical heat is one of the main reasons that desserts with cooling properties abound. Iced Sweet Green Beans is a local favorite on the streets of every city across Indonesia. Green mung beans are simmered until they reach a soft texture and impart a full-bodied flavor to the water. Sweetened with sugar and served over ice, this is a fresh, nutritious alternative to heavier cakes and sweets.

Ingredients :

    • 1 cup (200 g) green mung beans
    • 3 quarts (3 liters) water
    • 1 cup (200 g) sugar
    • 4 cups crushed ice

Method :

    1. Soak the green mung beans in a bowl of cold water for at least 2 hours, up to overnight.
    2. Drain the beans once they have soaked long enough. Bring 3 quarts (3 liters) of water to a vigorous boil in a pot. Stir in the drained green beans and lower the heat to medium high. Simmer for approximately 30 minutes, stirring occasionally.
    3. Add the sugar, lowering the heat to medium and simmer for another 20 minutes until the beans begin to pop open. While simmering, continue to stir occasionally, making sure nothing sticks to the bottom of the pot.
    4. Remove the pot from the heat and allow the beans to cool down for at least an hour in the sweetened water. When ready to serve, fill half of each serving glass with crushed ice. Then ladle the beans and sweetened water over the crushed ice and serve immediately. The beans can be kept in the refrigerator for up to 1 week.
