Icy Sweet Melon Strips (Es Blewah) Recipe

Icy Sweet Melon and Rose Syrup is a lightly sweet, incredibly refreshing dessert beverage that brings together fresh melon and fragrant rose syrup. My mother made this simple but divine dessert throughout my childhood. It is so good that as a child, my older sister would run to the refrigerator to drink as much of it as she could when she knew that guests were coming. I guess some things are too good to share.

Ingredients :

    • 1 small to medium-size ripe cantaloupe
    • 4 cups (1 liter) ice-cold water
    • 3/4– 1 cup (250 ml) rose syrup (not to be confused with rose essence; rose syrup is thick and red)
    • Crushed ice for serving

Method :

    1. Cut the cantaloupe in half and remove the seeds.
    2. Over a large mixing bowl, use the serrated end of a melon baller to scrape the flesh of the cantaloupe into long strips. It’s very important to do this over the bowl to ensure that you catch as much of the juice as possible. A beautifully ripened melon will produce a lot of juice as you scrape out the flesh.
    3. Add the ice-cold water and rose syrup. Stir thoroughly and serve on crushed ice in a tall serving glass or chill for a couple of hours and serve.
