Kuih Bingka Telur Recipe

Ingredients :

    • Eggs – 6, lightly beaten
    • Granulated sugar – 270 g
    • Plain (all-purpose) fl our – 195 g, sifted
    • Butter – 30 g, melted
    • Salt – a pinch
    • Vanilla essence (extract) – 1 tsp
    • Coconut milk 1 litre, from – 3 grated coconuts and suffi cient water
    • Yellow food colouring – 2–3 drops

Method :

    1. Line the base of a 22-cm square cake tin with greased greaseproof paper.
    2. Lightly stir eggs and sugar together. Add sifted fl our gradually to egg mixture and mix well.
    3. Stir in melted butter, salt, vanilla essence and coconut milk a little at a time until fully combined.
    4. Add yellow colouring and strain mixture into prepared tin.
    5. Bake in a preheated oven at 175°C for 45 minutes, then lower temperature to 150°C and bake a further 15 minutes until set.
    6. Leave to cool in the tin before cutting to serve.

Cooking time : 1 hour
