Kuih Nagasari Recipe

Ingredients :

    • Rice fl our – 240 g
    • Water – 500 ml
    • Coconut milk – 875 ml, from 1 grated coconut and suffi cient water
    • Screwpine (pandan) leaves – 2, knotted
    • Salt – 1/2 tsp
    • Banana leaves – 16, cut into 18 x 15-cm pieces, scalded
    • Small ripe bananas (pisang raja) – 8, peeled and halved lengthwise

Method

    1. Sift rice fl our into a bowl, add water and blend mixture until smooth.
    2. Place coconut milk, screwpine leaves and salt in a saucepan and bring to a slow boil. Add rice fl our batter and stir with a wooden spoon for approximately 5 minutes until mixture turns into a smooth paste. Remove from heat.
    3. Place a spoonful of cooked mixture in the centre of each banana leaf. Fold one side of banana leaf over to fl atten mixture into a small rectangle. Lift folded fl ap of banana leaf and top fl attened mixture with a piece of banana. Cover with another spoonful of cooked mixture. Fold banana leaf to overlap lengthwise to cover mixture. Tuck the other ends under to make a neat parcel. Continue until all 16 parcels are ready.
    4. Steam for 20 minutes and serve hot or cold.
