Kuih Pelita or Tepung Pelita Recipe

Ingredients :

    • Banana leaves 10–12, cut into 5 x 10-cm sheets
    • Granulated sugar

Coconut Topping

    • Rice fl our – 60 g, sifted
    • Sugar – 30 g
    • Coconut cream – 810 ml, from 3 grated coconuts and suffi cient water
    • Salt – 3/4 tsp

Rice Flour Layer

    • Rice flour – 225 g, sifted
    • Sugar – 60 g
    • Screwpine (pandan) leaves – 8, cut into small pieces
    • Coconut milk – 1.9 litres, from same 3 grated coconuts squeezed for coconut cream and suffi cient water
    • Salt – 1/4 tsp
    • Vanilla essence (extract) – 1 tsp
    • Green food colouring a few drops (optional)

Method :

    1. Scald banana leaves and dry with a tea towel. Fold into boat shapes and secure by stapling the two folded ends. Fill each boat with 1 Tbsp granulated sugar and arrange boats in neat rows, one against the other on steaming trays. This will help the boats keep their shape when fi lled.
    2. Prepare rice fl our layer. Place rice fl our into a large saucepan and add sugar.
    3. Put screwpine leaves with half the coconut milk and blend in an electric blender. Strain mixture. Gradually add mixture to rice fl our with remaining coconut milk and mix well with salt, vanilla essence and green colouring, if desired. Bring mixture to a slow boil, stirring all the time with a wooden spoon until thick, glossy and smooth.
    4. Fill boats with 2 Tbsp cooked mixture while it is still hot. Set fi lled boats aside.
    5. Cook coconut topping. Sift remaining rice fl our into a saucepan, add sugar and gradually stir in coconut cream with salt. Cook mixture over medium heat, stirring all the time until mixture is thick, glossy and smooth. Spoon 1 Tbsp hot coconut topping over green layer.
    6. Steam over rapidly boiling water for 15 minutes. Allow to cool thoroughly before serving.
