Kuih Wajik Recipe

Ingredients :

    • Water – 125 ml
    • Palm sugar (gula Melaka) – 300 g, cut into small pieces
    • Granulated sugar – 60 g
    • Screwpine (pandan) leaves – 8, 3 knotted and 5 reserved
    • Glutinous rice – 600 g, soaked overnight
    • Coconut cream – 500 ml, from 2 grated coconuts and suffi cient water, mixed with a pinch of salt

Method :

    1. Combine water, palm sugar, granulated sugar and knotted screwpine leaves in a saucepan and stir over low heat until sugar dissolves. Discard screwpine leaves and strain syrup.
    2. Line the base of a steaming tray with a piece of muslin and place a few extra blades of screwpine leaves on the cloth.
    3. Spread glutinous rice over screwpine leaves and steam for 45 minutes.
    4. Transfer steamed rice into a pan and mix with coconut milk and strained syrup. Cook mixture over low heat, stirring continuously until mixture becomes thick and a rich oily brown.
    5. Spread mixture onto an 18 x 28-cm tray and allow to cool and harden. Cut to serve.
