Spicy Potato Stir fry (Sambal Goreng Kentang) Recipe

Before the introduction of American fast food into Indonesia, there were no such things as French fries. Spicy Potato Stir-fry is Indonesia’s own version of French fries, with a million times more flavor and far less guilt. Pan-roasting the potatoes gives them the golden crisp exterior everyone loves, while lots of garlic, chili peppers, and sweet soy sauce combine to create a savory glaze that makes mouths water as the first scent of the dish wafts through the air. Though Indonesians typically serve this as a side dish, I love eating it as a healthier snack alternative whenever I get a French fry craving.

Ingredients :

    • 6-8 cloves garlic, minced
    • 1-2 bird’s-eye chili peppers or 1/41/2 teaspoon dried chili flakes
    • 1/2 teaspoon sugar
    • 2 tablespoons oil
    • 3 potatoes, peeled and cubed (11/2 lb/ 750 g)
    • 2 tablespoons sweet soy sauce
    • 1/2 teaspoon salt

Method :

    1. Grind the garlic, chili peppers, and sugar into a smooth paste using a mortar and pestle or food processor.
    2. Heat a wok over high heat. Add the oil and sauté the paste until fragrant for about 1 minute. Reduce the heat to medium high.
    3. Carefully place the cubed potatoes in the wok and stir-fry for 8 to 12 minutes until the potatoes are golden and crisp on the outside.
    4. Toss in the salt and sweet soy sauce, stir-frying for another minute until thoroughly mixed. Take care to fold the potatoes over when stir-frying instead of mashing them with the spatula. Serve as an accompaniment to a meat or poultry dish.
