Stuffed Chillies (Solok Lada) Recipe

Stuffed Chillies (Solok Lada) Recipe

Ingredients :

    • Spanish mackerel (ikan tenggiri) meat – 180 g
    • Grated skinned coconut – 150 g
    • Shallots – 3, peeled
    • Sugar – 1 tsp
    • Salt – 1 tsp
    • Large red chillies – 16, slit, seeded and soaked for 15 minutes
    • Coconut milk – 190 ml, from 3/4 grated coconut and suffi cient water, mixed with a pinch of salt

Method :

    1. Cut fi sh meat into large cubes and blend (process) with grated coconut and shallots until fi ne. Stir in sugar and salt and mix well.
    2. Stuff each chilli with 1 Tbsp fi sh mixture. Place chillies, slit side up, in a pot.
    3. Carefully pour in coconut milk. Cover pot and simmer gently for 15 minutes until cooked and almost dry. Dish out and serve hot.

Preparation time : 20 minutes
Cooking time : 15 minutes
Serves 8
