Broad bean fritters Recipe

Preparation time : 12 hours soaking time + 3 hours and 30 minutes cooking time

Ingredients for 4 servings

  • broad beans 21/4 lbs (1 kg)
  • water
  • salt to taste
  • onion, cut into thick slices 1
  • wild fennel to taste
  • extra-virgin olive oil to taste
  • frying oil as needed
  • chili peppers to taste

Method :

  1. Soak the dried broad beans overnight. The morning after, boil the beans, onion (cut into thick slices) and a few wild fennel tops in enough salted water to cover by 1 inch. Cook for at least 2-3 hours, so that the broad beans become a purée.
  2. Pass the mixture through a sieve and place the thick mixture on a marble board or a flat, well-greased cooking surface. Roll the mixture out into an even sheet about 0.8 inch (2 cm) thick using a rolling pin. Allow to cool and cut into strips, then fry them in hot oil.
  3. Serve hot. If desired sprinkle with crushed chili to taste.
