Broad beans with anchovies Recipe

Ingredients for 4 servings

  • broad beans, fresh (fava beans) 21/4 lb (1 kg)
  • garlic 2 cloves chopped
  • fresh marjoram 1 pinch
  • anchovies, chopped 4
  • extra-virgin olive oil 3 tbsp + 2 tsp (50 ml)
  • 3 tbsp (40 ml)
  • vinegar to taste
  • salt and pepper to taste

Method :

  1. Boil the broad beans in a small quantity of salted water until they are cooked al dente. Meanwhile, prepare a sauce by mixing together the chopped anchovies, garlic, marjoram, vinegar, oil, salt and pepper. Drain the beans and toss immediately with the sauce. Serve immediately.
  2. There is a variant: Fresh broad beans blanched in boiling salted water and then seasoned with chopped garlic, oil, marjoram, salt and pepper.
  3. Another sauce can be made using fresh chopped chives, olive oil, salt and pepper.
