Carasau Flatbread with Vegetables and Buffalo Mozzarella Recipe

Carasau Flatbread with Vegetables and Buffalo Mozzarella Recipe

Preparation time : 30 minutes + 10 minutes cooking time

Ingredients for 4 servings

  • Carasau bread 4 slices
  • zucchini, sliced lengthwise, 1/4-inch thick 10 1/2 oz (300 g)
  • eggplant, peeled and sliced 13/4 lbs (800 g)
  • ripe tomatoes, sliced 1/2-inch thick 1 lb (450 g) about 3
  • buffalo mozzarella 1/2 lb (250 g)
  • basil, thinly sliced to taste
  • extra-virgin olive oil to taste
  • salt and pepper to taste

Method :

  1. Clean the zucchini and slice it thinly lengthwise. Peel the eggplant and slice it into rounds, then sprinkle it with salt and place it in a strainer for at least 15 minutes to let any bitter liquid drain off.
  2. In the meantime, grill the zucchini on a very hot grill until browned on both sides. Remove and set aside. When it’s done, do the same with the eggplant, which should have drained and dried while the zucchini was cooking. Cut the tomatoes and mozzarella into slices of equal thickness.
  3. Carasau bread is a flat bread from Sardinia. Break each piece of Carasau bread into 3 or 4 pieces and start arranging the ingredients
    on a serving plate. Start with a piece of bread, then add a slice of zucchini, followed by a slice of eggplant, a slice of tomato and a slice of mozzarella. Drizzle olive oil on top, then sprinkle on a pinch of salt and pepper and a bit of basil. Place another piece of bread on top. Repeat the process until all ingredients are used, which should result in 3 layers for each serving. Top each “tower” with a slice of tomato and mozzarella. Drizzle olive oil on top and sprinkle with basil.
