Citrus fruit soup with pistachios

Citrus fruit soup with pistachios Recipe

(zuppetta di agrumi ai pistacchi)

Ingredients for 4 servings

  • oranges 101/2 oz (300 g) about 2 medium
  • yellow grapefruit 51/3 oz (150 g) about 1 medium
  • pink grapefruit 51/3 oz (150 g) about 1 medium
  • mandarin oranges 7 oz (200 g) about 2 medium
  • shelled, peeled, and chopped unsalted pistachios 1/4 cup (30 g)
  • sugar 2 tbsp (25 g)

Method :

  1. Use a potato peeler to zest 1 orange, half a yellow grapefruit and half a pink grapefruit. Be careful not to get any of the bitter white pith. Slice the peels into thin strips.
  2. Fill a small pot with water and bring to a boil. Add the peels and, as soon as the water returns to a boil, turn off the heat. Remove the boiled peels with a slotted spoon, and add the sugar and a few tablespoons of citrus fruit juice to the water. Bring it to a boil, then turn off the heat and let it cool. Set aside.
  3. Using a small, very sharp knife separate the fruit segments from the membrane, except for the mandarin oranges (these you can simply peel and separate the segments.) Reserve any juice from this process. In a bowl, toss together the fruit syrup, fruit segments, and any fruit juice. Chill. When thoroughly chilled, and divide among individual bowls or cups. Garnish with reserved fruit peel and top with pistachios.
