Conchiglie Pasta Salad with Prawns Recipe

Conchiglie Pasta Salad with Prawns Recipe

Ingredients for 4 servings

  • conchiglie pasta 12 oz (350 g)
  • cherry tomatoes 31/2 oz (100 g) about 6
  • king prawns 12
  • red onion 1 small
  • hot red pepper (fresh or dried) to taste
  • fresh basil 4-5 leaves cut into strips
  • garlic clove 1
  • extra-virgin olive oil 1/3 cup + 2 tbsp (100 ml)
  • salt and sugar to taste

Method :

  1. Boil the pasta in salted water. When it’s very al dente, strain it and quickly run cold water over it to cool it off. Strain it again, very thoroughly. Transfer it to a large bowl and mix in a bit of olive oil so it doesn’t stick together.
  2. Wash the tomatoes, cut them in half, and arrange them in a pan. Sprinkle them with a handful of salt and a pinch of sugar. Drizzle them with olive oil and bake them at 200° F (100° C) until tender about 45 minutes.
  3. Shell and devein the prawns. Sauté the garlic with the oil and a few thin slices of fresh hot pepper. When the garlic is well browned, add the prawns and sauté them as well, but don’t let them overcook.
  4. Peel and dice the onion. Stew it in a separate pan on low heat with a bit of oil. If necessary, add a bit of water. Add the tomatoes, prawns, and onion to the pasta. Mix well, adding some extra-virgin olive oil and fresh basil (cut into strips). Season with salt and pepper to taste and serve.
