Fish Skewers in Salmoriglio sauce Recipe

Fish Skewers in Salmoriglio sauce Recipe

(spiedini di pesce al salmoriglio)

Preparation time : 45 minutes + 10 minutes cooking time

Ingredients for 4 servings

  • scallops 8
  • shrimp, shelled and deveined 8 medium
  • anglerfish or monkfish fillet 1/2 lb (200 g)
  • mullet or any firm-fleshed white fish, 2 fillets 1/2 lb (200 g) each
  • juice of 2 lemons
  • garlic 1 clove minced
  • parsley, chopped 1 tbsp (0.5 g)
  • fresh oregano, chopped 1 tsp (1.25 g)
  • extra-virgin olive oil 3/4 cup + 2 tbsp (200 ml)
  • water 31/2 tbsp (50 ml)
  • salt and black pepper to taste

Method :

  1. Cube the anglerfish and slide it onto skewers, alternating with the scallops, shrimp and mullet fillets.
  2. For the sauce: Pour the oil into a bowl and whisk in the lemon juice and hot water, mixing vigorously. Add the garlic and parsley. Heat the mixture in a double boiler for 5-6 minutes, whisking continuously.
  3. Drizzle some salmoriglio over the skewers, then grill over medium-high heat, basting with more salmoriglio as they cook. Season them with salt, pepper and fresh oregano.
  4. Serve 2 skewers per person, topping them with the remaining salmoriglio.
