Grilled Lamb Skewers with Thyme Recipe

Grilled Lamb Skewers with Thyme Recipe

Ingredients :

    • 1 lb. 12 oz. (800 g) lamb
    • 2 lbs. 10 1/2 oz. (1.2 kg) potatoes
    • 2 cloves garlic
    • 2 sprigs fresh thyme
    • 1 oz. (30 g) fresh rosemary, or about 1/cup plus 1 tbsp.
    • 2/3 cup (150 ml) extra virgin olive oil
    • salt and pepper

Method :

    1. Heat the oven to 350°F (180°C). Soak wooden skewers in water for 20 minutes.
    2. Cut the lamb into 1/3/4 inch (1-2 cm) cubes and slide them onto the skewers.
    3. Bring a pot of water to a boil. Peel the potatoes and cut them into wedges. Cook them for 5 minutes, drain, and put them in a preheated baking dish with half of the oil, 1 of the garlic cloves, salt and pepper. Roast for 30 minutes.
    4. Strip the thyme from the stem and thinly slice the remaining garlic clove. Spread them over the skewers and drizzle the remaining olive oil on top. Let the meat marinate for at least 20-30 minutes in the refrigerator.
    5. Before grilling, let the skewers warm up to room temperature for about 10 minutes, and remove the garlic and thyme from the meat to prevent them
    6. from burning. Cook the skewers on a grill or flat griddle for about 10 minutes, seasoning with salt and pepper to taste. Serve with the potato wedges.
