Mackerel Salad Recipe

Ingredients for 4 servings

  • fresh mackerel 32 oz (1 kg), about 4 whole
  • mixed greens 6 oz (200 g)
  • golden raisins, soaked in water and drained 1/3 cup (50 g)
  • toasted pine nuts 1/4 cup + 2 tbsp (50 g)
  • green olives, chopped 13/4 oz (50 g) about 18
  • chives, chopped 1 tbsp (0.1 g)
  • mint leaves, chopped 1 tbsp (0.5 g)
  • extra-virgin olive oil 1/4 cup (60 ml)
  • balsamic vinegar 2 tsp (10 ml)
  • salt and pepper to taste

court-bouillon :

  • water 81/2 cups (2 L)
  • vinegar 1 cup (250 ml)
  • carrots 24/5 oz (80 g) about 11/2 small
  • onions 51/3 oz (150 g) about 2 small
  • celery 21/2oz (70 g) about 2 medium
  • stalks
  • black peppercorns 5
  • bay leaf 1

Method :

  1. Make the court-bouillon first, putting all the ingredients in the water and letting it boil for 30 minutes. Soak the raisins in warm water for at least 15 minutes and drain.
  2. Clean and gut the mackerel, rinsing them well under cold water. Rinse the greens and chop up the olives.
  3. Boil the mackerel in the court-bouillon for 10-12 minutes (cooking time will depend on the size of the fish), then let them cool. Fillet them and remove the bones, then divide each fillet into 4 pieces.
  4. In a large bowl, mix together the greens, chives, and mint. Dress the mixture with the balsamic vinegar, salt and oil. Mix well and distribute it among serving plates, adding the olives, raisins and pine nuts. Add the mackerel fillets last. Drizzle olive oil on top and sprinkle with freshly ground pepper.
