Penne with Asparagus Recipe

(penne agli asparagi)

Preparation time : 15 minutes + 11 minutes cooking time

Ingredients for 4 servings

  • penne rigate pasta 12 oz (350 g)
  • asparagus 1/2 lb (250 g)
  • unsalted butter 3 tbsp + 2 tsp (50 g)
  • Parmigiano-Reggiano cheese, grated 1/3 cup + 1 tbsp (40 g)
  • garlic cloves 2
  • eggs 2
  • fresh red hot pepper to taste
  • salt to taste

Method :

  1. Carefully wash the asparagus and remove the tough parts. Slice the stems into rounds and leave the tips whole. Put them in a pot (terracotta if possible) with the unsalted butter, the two garlic cloves and a bit of hot pepper (at your discretion). Stew them for about 10 minutes on medium heat.
  2. Beat the eggs in a bowl with the grated Parmigiano and a pinch of salt.
  3. Boil the pasta in salted water until it’s al dente. Remove the garlic from the pot of asparagus, and add the pasta. Then add the egg and cheese mixture, quickly stir it into the pasta, and serve immediately.
