Peppered Mussels Recipe

Ingredients :

    • 2 1/4 lbs. (1 kg) mussels, scrubbed and debearded
    • 1 clove garlic
    • 4 tbsp. (60 ml) extravirgin olive oil
    • 8 slices crusty bread, toasted (optional)
    • fresh parsley, chopped, to taste
    • pepper

Method :

    1. Heat the oil in a skillet. Add the whole clove of garlic and cook until fragrant, but do not brown.
    2. Add the mussels, cover, and cook until they open.
    3. Discard any mussels that have not opened. Sprinkle the mussels generously with freshly ground pepper and parsley. Stir well. Transfer to serving bowls. Serve with the toasted bread, if using.
