Radicchio with speck Recipe

(insalata con speck)

Ingredients for 4 servings

  • heads red radicchio 2
  • speck (or smoked bacon) 7 oz (200 g)
  • balsamic vinegar 2 tbsp (30 ml)
  • olive oil 2 tbsp (30 ml)
  • salt to taste

Method :

Wash and dry the radicchio. Dice the speck and sauté it in the oil in a pan. When the speck is golden brown, add the balsamic vinegar and let it evaporate. Use this sauce to dress the radicchio, seasoning with salt and pepper. Serve immediately.

Did you know that…

Speck is a type of uncooked seasoned ham that has been aged and lightly smoked. It is typical of the region of Alto Adige, and more specifically of the province of Bolzano. The meat has a characteristically bright pink color, with occasional veins of white fat. It is flat in shape and tastes of a harmonious mixture of salt,  spices and smoke.
