Salad with pink grapefruit, young spinach and walnuts Recipe

Ingredients for 4 servings

  • pink grapefruit 2
  • walnuts, shelled and roughly chopped 16
  • young spinach leaves fresh 7 oz (200 g)
  • extra-virgin olive oil 31/2 tbsp (50 ml)
  • salt and black pepper to taste

Method :

  1. Peel the grapefruit and divide into segments. Squeeze the remaining pulp into a container; add the salt and extra-virgin olive oil to the grapefruit juice to make a citronette dressing. Wash and dry the spinach carefully. Add the citronette dressing to the spinach in a bowl.
  2. Arrange the salad on a plate and garnish with the walnuts and
    grapefruit segments.
  3. Before serving, sprinkle with ground black pepper.

Among the ingredients of this unusual spring salad are walnuts. Since ancient times they have been a symbol of life. In Roman times they used to be thrown at the bride and groom because their sound covered the shouts of the bride during her simulated kidnapping. She then had to throw the walnuts because their falling and bouncing was a sign of good fortune. Such traditions have not been completely lost in Europe although rice is now thrown at weddings in Italy.
