Salmon and Spinach Lasagna Recipe

Salmon and Spinach Lasagna Recipe

(lasagne con salmone e spinaci)

Preparation time : 1 hour + 20 minutes cooking time

Ingredients for 4 servings

for the pasta :

  • soft wheat flour (preferably Italian-type flour) 22/5cups (300 g)
  • eggs 3

for the purée :

  • unsalted butter 3 tbsp (45 g)
  • flour 1/4 cup + 1 tbsp (40 g)
  • vegetable broth 2 cups (0.5 L)
  • salt to taste

for the filling :

  • salmon fillet 1/2 lb (250 g)
  • fresh spinach 101/2 oz (300 g) about 10 cups
  • fresh ginger, grated 1 oz (30 g)
  • extra-virgin olive oil 1/3 cup + 2 tbsp (1 dl)
  • garlic 1 clove
  • salt and pepper to taste

Method :

  1. Pour the flour onto a cutting board or marble counter and create a well in the center. Break the eggs and drop them into the well. Start working them into the flour with a fork, then use your fingers and palms to knead the dough until it’s smooth and consistent. Wrap it in plastic and refrigerate it for 30 minutes.
  2. Roll the dough out to 1/32 inch (1 mm) thick and cut it into 4 x 43/4 inch (10 x 12 cm) rectangles. Boil the pasta in salted water and strain it when it’s al dente. Cool it off immediately by putting it in a bowl of salted ice water. Then lay the rectangles out on cloths to dry. Preheat oven to 350° F (180° C).
  3. Now make the sauce. Melt the unsalted butter in a deep pot, being careful not to let it burn. Add the flour, whisking continuously. Then start pouring in the broth, still whisking to avoid lumps. Bring it to a boil and maintain it for 1 minute to thicken the sauce slightly.
  4. Sauté the whole garlic clove in half the oil. Add a teaspoon of grated ginger along with the spinach (pre-washed and drained). Season with salt and sauté it for a few seconds, but don’t let it cook too much.
  5. Remove the skin and any bones from the salmon. Dice it and sauté it in the remaining oil. Season it with salt and pepper to taste.
  6. Spread some sauce in a greased baking dish and cover it with a layer of pasta. Cover it with a few spoonfuls of sauce, salmon pieces, and spinach. Continue in this order until all the ingredients have run out.
  7. Bake the lasagna for about 20 minutes. Let it cool for 5-10 minutes and serve.
