Sea Bass in Acqua Pazza (Crazy Water) Recipe

Ingredients :

    • 3 lbs. 5 oz. (1.5 kg) sea bass
    • 51/2 oz. (150 g) yellow onion, about 1 medium, thinly sliced
    • 1/2 lb. (250 g) cherry tomatoes
    • 31/2 tbsp. (50 ml) extravirgin olive oil
    • 5 fresh basil leaves
    • 2 cloves garlic
    • 3/4 cup plus 11/2 tbsp (200 ml) water
    • salt and pepper

Method :

    1. Clean and fillet the sea bass, removing all the bones.
    2. Heat the olive oil in a skillet until hot. Sauté the onion, garlic, and basil, and then add the tomatoes and water; let cook for about 10 minutes. Season the fish with salt and pepper, then add it to the acqua pazza and let it cook through. Serve.
