Sedanini with Arugula Pesto and Salmon Recipe

(sedanini con pesto di rucola e salmone)

Preparation time : 35 minutes + 12 minutes cooking time

Ingredients for 4 servings

  • sedanini rigati pasta 12 oz (350 g)
  • arugula 31/2 oz (100 g) about 5 cups
  • extra-virgin olive oil 3/cup + 11/2 tbsp (200 ml)
  • garlic 1 clove
  • pine nuts about 21/2 tbsp (20 g)
  • potato 13/4 oz (50 g) about 1 small
  • vegetable broth (fresh or bouillon cube) 3 tbsp + 2 tsp (50 ml)
  • salt and pepper to taste
  • salmon 7 oz (200 g)
  • shallot, minced 2 tbsp (20 g)
  • fresh rosemary, minced 1 tsp (0.7 g)
  • cherry tomatoes, quartered 41/oz (120 g) about 7
  • vodka 1 tsp (5 ml)

Method :

  1. Boil the potatoes in salted water until tender. Strain them and purée them with the arugula, garlic, pine nuts, vegetable broth, and 2/cup (150 ml) of olive oil.
  2. Sauté the shallot in the remaining oil. Slice the salmon into thin strips and add it to the shallot. Add the vodka and let it evaporate over high heat. Add the tomatoes (cut into quarters) and the minced rosemary. Let the mixture cook for 4-5 minutes, then combine with the arugula pesto.
  3. Boil the pasta in salted water and strain it when it’s al dente. Combine it with the sauce and mix well. Another option is to add the cooked pasta to the pan with the salmon and let them cook together for a minute, then spread some arugula pesto on each plate and place a portion of pasta on top.
