Stuffed peaches

Stuffed peaches Recipe

Preparation time : 20 minutes + 30 minutes cooking time

Ingredients for 4 servings

  • peaches 2.2 lbs (1 kg) about 8 medium
  • skinless almonds 41/5 oz (120 g)
  • bread roll, soaked in milk 1
  • eggs, separated 3
  • sugar 51/3 oz (150 g)
  • confectioner’s sugar for serving 13/4 oz (50 g)

Method :

  1. Choose peaches that are not too ripe. Cut in half, and using a pointed knife, remove the pit and a bit of the flesh, in order to create a space for the filling. Put the peaches in a greased oven dish. Prepare the filling. Wring out the milk-soaked bread. Whisk the egg yolks with the sugar. Crush the almonds in a mortar and mix them with the bread, the peach flesh and the egg/sugar mixture.
  2. Beat the egg whites until they form stiff peaks, then fold them into the filling mixture. Fill the peaches with the mixture and bake for about 30 minutes at 300° F (150° C). Dust with confectioner’s sugar and serve lukewarm.
  3. The almonds can be replaced with chopped macaroons as a variation.
