Vegetable dumplings Recipe

(gnudi profumati agli odori dell’orto)

Preparation time : 30 minutes + 10 minutes cooking time

Ingredients for 4 servings

for the gnudi :

  • fresh spinach 14 oz (400 g)
  • fresh ricotta cheese 14 oz (400 g)
  • Parmigiano-Reggiano cheese 1 oz (30 g)
  • egg yolk 1
  • all-purpose flour 51/3 oz (150 g)
  • potato starch 11/3 oz (40 g)
  • nutmeg to taste

for the sauce :

  • tomato sauce 1/2 cup (1 dl)
  • butter 2 oz (60 g)
  • fresh sage 1/3 oz (10 g)

Method :

  1. Cook the spinach in a small amount of boiling salted water, drain it and leave to cool completely. Squeeze out any excess water and then chop finely.
  2. On a work surface, add all the other ingredients to the spinach purée, and mix everything together thoroughly and rapidly. The resulting mixture must be uniform and soft. Leave the mixture to rest for about 30 minutes on a well-floured board. With the aid of a pastry bag with a smooth 3/4 inch- (2-cm) tip, form some lengths of pasta and cut them into 11/4-inch (3-cm) long pieces.
  3. Cook the gnudi in abundant boiling salted water, and when they rise to the surface, strain them. In a large pan, melt the butter with the sage leaves. Lay the gnudi gently in the pan and toss them with the Parmigiano cheese. Arrange the gnudi on the serving dish, and top with fresh tomato sauce and some basil leaves.
