Whole Wheat Spaghetti with Creamy Asparagus and Goat Cheese Recipe

Whole Wheat Spaghetti with Creamy Asparagus and Goat Cheese Recipe

Preparation time : 30 minutes + 8 minutes cooking time

Ingredients for 4 servings

  • whole wheat spaghetti 12 oz (350 g)
  • asparagus 14 oz (400 g)
  • fresh goat cheese 24/5 oz (80 g)
  • fresh basil 1 bunch leaves torn
  • shallot 1
  • fresh mint 5 leaves, torn
  • garlic clove 1/2
  • extra-virgin olive oil 2 tbsp (30 ml)
  • salt and pepper to taste

Method :

  1. Clean and rinse the asparagus. Remove the tougher parts of the stems and slice them into rounds. Keep the tips separate and boil them in salted water. Set aside 1/4 cup + 1 tablespoon of the water after straining them.
  2. Mince the shallot and sauté it in the oil with the half garlic clove. When they’ve turned golden brown, add the sliced asparagus stems and season with salt and pepper. Then add a few handtorn mint and basil leaves. Add the reserved water and let cook for 10 minutes, then purée everything.
  3. Boil the spaghetti in salted water until al dente. Combine with the purée and asparagus tips, and let it all cook together for a minute. Distribute it among the serving plates and top each one with a quenelle (spoonful) of fresh goat cheese.
