Asian greens with prawns and cashews Recipe

Chinese broccoli (kailan) and other dark Asian greens have a slightly bitter taste that translates also to a “bitter” aroma. When combined with garlic and the delicious buttery perfume of sautéed prawns, this dish swells with fragrance, especially when mushrooms and cashew nuts are added.

Ingredients :

    • 1 tablespoon oil
    • 2 cloves garlic, minced
    • 12 fresh prawns, peeled and deveined
    • 12 dried black Chinese mushrooms, soaked in hot water until soft, stems trimmed, caps sliced
    • 1 teaspoon Sambal Oelek chilli paste or other sweet chilli paste
    • 1 bunch Chinese broccoli (kailan), stems only, peeled and sliced diagonally
    • 200 g (2 cups) sliced bok choy
    • 2 tablespoons oyster sauce
    • 1/teaspoon sesame oil
    • Salt and ground white pepper, to taste
    • Dry-roasted cashew nuts, to garnish
    • Crispy Fried Garlic, to garnish

Method :

    1. Prepare the Sambal Oelek Chilli Paste and Crispy Fried Garlic.
    2. Heat the oil in a wok and stir-fry the garlic over medium heat until fragrant and golden, about 1 minute. Add the prawns, mushroom slices and Sambal Oelek and stir-fry for 1 minute. Add the vegetables and toss well over high heat for 2 minutes until tender. Season with the oyster sauce, sesame oil, salt and pepper to taste, and remove from the heat. Transfer to a serving platter, sprinkle with cashew nuts and Crispy Fried Garlic on top and serve hot with steamed rice.

Note : To prepare as a vegetarian dish, simply omit the prawns.
