Cabbage sautéed with spices Recipe

This is an ideal recipe to dress up plain tasting cabbage. Nose-spiking mustard seeds combine with the aromas of onion, garlic and curry leaves to spice up the dish. This cabbage dish has been cooked in our home for as long as I can remember, and is as surprising as it is tasty. This dish goes well with any of the fish curries in this book.

Ingredients :

    • 1 tablespoon oil
    • 1 teaspoon black mustard seeds
    • 2 cloves garlic, chopped
    • 1 large onion, halved and finely sliced
    • 500 g (4 cups) thinly sliced cabbage
    • Pinch of ground turmeric
    • 2 eggs, beaten
    • 1 teaspoon salt, or to taste
    • 1/2 teapoon ground white pepper
    • 6–8 curry leaves, chopped

Method :

    1. Heat the oil in a wok and fry the mustard seeds over high heat until they pop. Add the garlic and onion and stir-fry until golden and tender, about 2 minutes. Stir in the cabbage and ground turmeric, and toss well. Reduce the heat to a simmer, cover and cook for 3–5 minutes, stirring occasionally.
    2. Remove the cover, push the cabbage to the sides of the wok to make a well in the centre and pour in the beaten egg. Cook the eggs until set, then scramble gently and toss with the cabbage until well blended. Season with salt and pepper, adjusting the taste. Stir in the curry leaves and remove from the heat. Serve immediately with steamed rice.
